steel cut oats muffins

Ingredients
1 cup steel cut oats1 cup lowfat milk1/2 cup unsweented applesauce2 egg whites1 cup whole wheat flour1/2 cup brown sugar1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp cinnomin3 tablespoons flax seeds ground up3/4 cup whole almonds chopped3/4 cup dried fruit1tsp sugar1tsp cinnomin mixed and sprinkled on top before baking
Directions
soak oats in milk for an hour add egg whites and applesauce. blend dry ingredients add to liquid and stir just til combined spray muffin tins and cook 375 -20 minutes
makes 12 plus
