Low Carb Banana Bread

1/8 c. Splenda1/4 c. Diabetisweet (or use all Splenda)1 egg1 medium-size ripe banana, mashed1/2 t. vanilla extract1/2 t. banana extract (or use all vanilla)2 T. reduced fat sour cream1/4 c. canola oil3/4 c. wheat protein isolate1/3 c. Bob's Red Mill almond meal/flour1/4 t. baking soda1/4 t. salt1/4 t. baking powder
Mix the first 8 ingredients in large bowl. Mix until it is all incorporated. Sift the next 5 ingredients and mix into wet ingredients until incorporated.
Add 1/4 c. walnuts if desired (not included in nutritional calculation). Pour into medium sized loaf pan that has been sprayed with Pam. Bake at 350 degrees for 30 minutes or until done.
The loaf pan I use yields 10 slices that are almost 1" thick.
NOTE: Diabetisweet can be found at Wal-Mart and K-Mart with the diabetic supplies. It looks and tastes just like sugar. It's in a light blue 1-lb. bag.
