Lisa's Homemade Vegetable Soup

Ingredients
1 1.89L bottle of PC low sodium vegetable cocktail3 boxes 900ml each of Campbells low sodium chicken broth1 bag of spinach (227g) chopped finely2 cups of chopped carrots1 cup chopped celery1 medium onion chopped1 package of sliced white mushrooms, chopped (227g)1 can PC no salt added peaches and cream corn (341 ml)2 Cups of Nu Pak Soup Mix(Contains pot barley, yellow split, green,split, green whole, yellow whole, green lentils, bean mix)2 Tbsp. dried parsley4 Tbsp. italian seasoning
Directions
Thow everything into an 8 quart stockpot, bring to a boil. Turn heat down and simmer for a few hours.
