Light Curried Coconut Chicken

Ingredients
4 chicken breasts, cut in chunkssalt and pepper to taste1 1/2 tablespoons vegetable oil2 tbsp curry powder1/2 onion, thinly sliced2 cloves garlic, crushed1 cup light coconut milk1.5 cups stewed diced tomatoes1/2 cup tomato sauce1 tablespoon sugar
Directions
Season chicken with salt and pepper.

Heat oil and curry powder in a large skillet over medium hear for 2 mins. Stir in garlic, and onion, and cook a bit longer. Add chicken, and cook until no longer pink.

Pour in tomatoes, sauce, and coconut milk. Add sugar and stir. Cover and simmer, stirring occationally for about 40-50 minutes.
