Chicken Fajitas

Ingredients
1 tspn of Sunflower Oil1 large Onion, sliced1 med. size Red Pepper, sliced1 large Skinless Boneless Chicken BreastCumin, to tasteChili, powder to tastepinch of sals2 Flour Tortillas1/4 cup of Tomato Salsa
Directions
1. In hot cast iron pan (preferably) add oil, followed by sliced onion. Turn heat down to med.

2. Once onion is half cooked, add sliced red pepper.

3. While vegatables are cooking, slice chicken breast in half (horizontaly), then slice each piece so that they resemble thin strips. Add spice to chicken.

4. Add chicken slices to onion and pepper mix and stir all together until chicken is cooked (chicken may stick a bit to bottom of pan). Add 1/4 cup of water and mix as to remove the good stuff that is stuck in the bottom of the pan.

5. Add Chicken mix to warm tortillas, and top with salsa.

    Great recipe! We had some leftover beef, so I substituted that for the chicken, added a couple cans of black beans, and it turned out excellent! - 6/6/07
