Bob's Red Mill Bran Flax Muffins

Ingredients
1.5 c Bob's Red Mill Unbleached White Flour.75 c Bob's Red Mill Flaxseed Meal.75 c oat bran1 cup brown sugar, loosely packed2 tsp baking soda1 tsp baking powder.5 tsp salt2 tsp cinnamon1.5 c carrots, shredded2 apples, peeled and shredded.5 c nuts, chopped.75 c 1% milk2 eggs, beaten1 tsp vanilla extract
Directions
Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in carrots, apples and nuts.

Combine milk, beaten eggs and vanilla in a separate bowl. Pour liquid ingredients into dry ingredients and stir until moistened. Do not over mix.

Fill muffin cups 3/4 full. Bake at 350F for 15-20 minutes.

Yields 15 medium muffins
