Apricot Lentil Soup - 1 serving = approx. 1 cup

2 tablespoons olive oil1 cup chopped onion1/3 cup diced dried apricots (approximately 10 dried apricots)2 cloves garlic, diced1½ cups dried red lentils, washed2 tomatoes, diced½ teaspoon cumin½ teaspoon dried thyme2 tablespoons lemon juice2 tablespoons honeyfreshly ground black pepper, to taste
1. Sauté the onion, garlic and diced apricot in olive oil until cooked.
2. Add lentils and water. Bring to a boil, then reduce heat and simmer for approximately 30 minutes.
3. Add the tomatoes, cumin, thyme, honey, and pepper to taste. Simmer for approximately 10 minutes more.
4. Add lemon juice.
5. Purée soup.
*Makes approximately 8 1-cup servings, depending on how long you simmer the soup.
