Crustless Crab Quiche

Ingredients
6 oz. crab, flaked1/2 cup sweet onion1 cup sliced mushrooms1 cup broccoli1 c skim milk1 cup eggbeaters1/2 t. powdered mustarddash paprikajuice of 1/2 lemon3 oz low fat cheddar/colby cheese1/2 t. salt1/8 t. peppercooking spray
Directions
Preheat oven to 400 degrees. Spray glass pie pan with Pam cooking spray. Sautee desired veggies in 1 tablespoon of olive oil until veggies are slightly cooked. Combine crab, cheese and juice of 1/2 of lemon (to taste). Pres mixture into pie pan. Whisk together remaining wet ingredients except paprika. Gently add sauteed vegetables on top of crab mixture. Then pour egg mixture on top of crab mixture. Sprinkle with paprika. Bake until set about 30 to 40 minutes. Let stand for 15 minutes and serve.

    We really like this one. I added some minced garlic to the veggies, and I didn't have any mushrooms so I added a little extra broccoli, and I used imitation crab since I don't have access to fresh. DH and I both like it. - 11/19/11
