Chicken Caprese with Tomato-Basil Cream

2/3 C. Seasoned Bread Crumbs1/3 C. Parmesan cheese, grated1 t. Dried Basil1/4 t Salt1/4 t Pepper3 T. Olive oil2 T. Lemon Juice4 Skinned and boned chicken breast halvesTomato-Basil Cream1 C. Spaghetti sauce1 t. Dried Basil2 T. Light Sour Cream
To prepare the chicken for baking:
Stir together first 5 ingredients in a shallow bowl. Whisk together olive oil and lemon juice until blended. Dip chicken into olive oil mixture, and dredge in bread crumb mixture, pressing to coat.
Place in a lightly greased 11"x7" baking dish (I use a pizza stone). Spray top of the chicken with Pam when you place it in the baking dish or on the stone.
Bake at 375 degrees for 30 minutes or until chicken is done. Serve with Tomato-Basil Cream: garnish with lemon slices, Basil spirgs (if desired).
Yield: 4 servings
Prep time: 20 minuites, Bake 30 minutes
Tomato-Basil Cream Prep:
Cook all ingredients in a small saucepan over low heat, stirring often, 5 miunutes or unitl thoroughly heated.
Yield: 1 cup
Prep time: 3 minutes, Cook time 5 miunutes.
I serve over whole wheat pasta or spaghetti squash. ( Pasta and squash calories not included in the nutritional data.)
