Ingredients
1 cup flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 3/4 cup brown sugar 1 egg 1/4 cup applesauce2 tbsp canola oil2 tart apples, peeled, and chopped coarsely1/2 cup raisins (optional, not included in NI)
Directions
Preheat oven to 350 F. Grease a loaf pan.
Whisk together the flour, baking soda, cinnamon and salt. Set aside.
In a medium bowl, mix together the sugar, egg, applesauce and oil. Stir in the sifted ingredients. Fold in the apples.
Bake for 45-50 minutes.

    This recipe is fantastic. I increased the applesauce to 1/3 c. & added walnuts. Also, drizzled carmel over the top as soon as I pulled it out of the oven. My friends & family are still talking about it. - 11/4/09

    The recipe is quite good. I did however make some modifications: I used self raising wholemeal flour and because the mix was so thick and I wasn't able to stir it I had to add 1/3 cup of soy milk (or use skim) to get a nice consistency. Also mine wasn't as dense as the pitcure and was golden brown. - 6/5/09
