Easy Stir-Fry Chicken Dinner

1 1/2 lbs. boneless, skinless chicken breast3 garlic cloves1/4 c. diced sweet red pepper1 cup sliced mushrooms1 T. EVOO1/2 cup chopped red onion1/4 c. (10.75oz) Chicken Broth4 T. shredded parmesan cheese1/2 cup sliced carrots2 T. Lite Soy Sauce1 c. frozen broccoli cuts20 spears Asparagus, diagonally chopped1 bag Birds Eye Steamfresh 100% Whole Grain Brown Rice (3/4 c./serving), cooked (optional)
HEAT oil in large skillet on medium-high heat. Add chicken, garlic, and onion; cook and stir until chicken is done.
ADD broth, asparagus, red pepper, carrots, mushrooms, broccoli, black pepper and soy sauce.
Cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in cheese.
Serve over rice.
