Quick Mini Quiche

Ingredients
8 Large Eggs 1 cup Fresh Cooked Spinach or Drained Frozen Spinach1/4 cup of WaterSalt and Pepper to taste/or any other spiceOptional: 1 cup of Shredded Swiss Cheese, or other White CheeseMIcrowave Safe Muffin Pan
Directions
Add 1 cup of Fresh Spinach to microwave safe bowl with 1/4 cup of water and blanch Spinach in microwave for about 1 minute or until Spinach shrinks. For frozen spinach, just defrost and drain.

Crack 8 eggs into bowl and beat until blended.
Add milk if desired to "fluff", as if you would be making scrambled eggs. Add spinach to egg mixture and cut in cooked/drained spinach.
Optional: Add shredded cheese, salt and pepper to egg mixture.

Fill each "Muffin" cup half way with egg mixture.
Pop in microwave for 40 seconds to 1 minute or
until egg is cooked.

Depending on what type of microwave safe "muffin" pan you are using this recipe will make 8 to 16 mini quiches.

Yield: Servings can be as small or as large as you would like. You can make a quick quiche with just lowering the ingredients listed.
Example: 1 small/medium egg, 1 tbsp of spinach, pinch of swiss cheese.
