White Bean Salad

Ingredients
1C cooked white beans1/2C chopped fresh tomatoes1 scallion sliced thinly1/4C fresh parsley, minced1 tsp lemon zest1/4 C fresh lemon juice1/2 tsp sea salt1/2 tsp ground pepper1 bunch arugula Dressing:1 tbsp extra virgin olive oil2 tbsps balsamic vinegar1 tsp agave nectarsalt and pepper to taste
Directions
Toss beans, tomatoes, scallion, parsley, lemon zest, lemon juice and salt/pepper in a medium bowl.
In another bowl, toss argula and homemade balsamic vinaigrette. Divide argula among plates evenly.
Top arugula with spoonfuls of bean mixture.
