Spinach and Tomato Quiche

Ingredients
2 cups - cooked UNCLE BEN'S Fast and Natural Whole Grain Instant Brown Rice 1 cup - chopped tomato3 scallions, chopped1 cup - swiss cheese, shredded1 cup - half and half4 eggs, beaten1/2 tsp. - ground white pepper1/4 tsp. - ground nutmeg1 package frozen spinach thawed and squezed dry1/4 cup of water1 can vegetable broth (14 oz)
Directions
1. Cook rice according to package directions (minus the butter) replacing water with broth. Add water to meet the required amount of liquid in directions if necessary.
2. In the meantime, combine spinach, 1/2 c. of cheese, 1/2 c. of the tomato, cream, eggs, pepper and nutmeg, set aside.
3. Combine rice and the remaining cheese in a large bowl, set aside
3. Spray a 10-inch quich dish w/ cooking spray. Press rice mixture into bottom and sides of dish; use wax paper to press evenly, Bake in preheated 400 degree oven for 5 minutes. Lower temp to 385 and pour the spinach mixture into rice crust. Top with remaining tomato.
4. Continue baking at 385 for 25 minutes or untill knife inserted near center comes out clean.

    Brown rice makes the crust fall apart. Just use crust next time. Frozen spinach takes WAY too much time to pat dry. I didn't have too much of a problem with it, but family didn't like it that much. Said it had too much spinach taste in it. (I think due to frozen spinach) Try different recipe - 6/12/12

    This wasn't bad, just bland. I plan on making again with a few modifications. I'm going to put about 3/4 the package of spinach in instead of the full package, and use pepperjack cheese instead of swiss and hopefully that will add some flavor. - 1/18/10

    2nd time was better, but not great. I used fresh instead of frozen spinach, but the end product was watery. I may try again with more modifications, but each try is getting better. - 8/14/09

    This was great. The entire family loved it -- even those that don't like quiche. Recipe does not show what to do with scallions -- so you'll need to add that. But this is a great quick meal - 8/6/09
