Roasted Garlic Cauliflower

Ingredients
4 tsp minced grlic2 tbsp olive oil6 C of cauliflower4 tbsp grated parmesan cheese2 tsp chopped parsleysalt and pepper to taste
Directions
1. Preheat the oven to 450 degrees. spray pam in casserole dish
2. Place the olive oil and garlic in a large resealable bag. Add cauliflower and shake to mix.
3. Bake for 25 minutes stirring halfway through. 4. Top with Parmesan cheese and parsley and broil for 3 to 5 min or until golden brown

    This is a wonderful recipe. I was never a fan of cauliflower until I tried it this way. I will definitely make it again....only double the recipe! - 10/18/10
