2 C potatoes diced, 1/2 cup cheddar cheese, 4 oz sour cream reduced fat, 2 TB butter, 1/2 can of 98% ff cream of chicken soup, salt pepper
Mix all ingredients in a pan. Bake @ 350 uncovered until potatoes are cooked.
