Whole Wheat Couscous Salad

Ingredients
1/2 cup whole wheat couscous1/2 cup chopped raw zucchini1/2 cup chopped green bell pepper1/4 cup finely diced red onion3/4 teaspoon ground cumin1 lime, juiced2 tbsp extra virgin olive oil
Directions
Cook couscous according to package instructions, then fluff. Allow to cool before adding chopped vegetables.
Whisk together cumin, lime juice, and olive oil. Pour vinaigrette over salad, tossing to combine.
