Ingredients
1 can chickpeas1 med onion, minced3 cloves garlic, minced4 tsp ginger root, minced1 tbsp curry powder1 tbsp garam masala1/2 tbsp cinnamon, ground1/2 tbsp whole cumin1 tsp coriander, ground1 tsp cardamom, groundwater
Directions
Combine chickpeas with liquid, onion, garlic & ginger and cover in a medium sauce pan.
Simmer on med-hi for 30 min.
Using back of wooden spoon, mash beans.
Add spices and water to cover.
Cover and simmer for additional 20 min, periodically mashing beans.
Remove cover for last 10 minutes, and allow liquid to evaporate.

Makes 5 1/2 cup servings.
