Shrimp & Asparagus Wheat Wrap

Shrimp, raw, 20 small (tails removed)Asparagus, fresh/flash frozen, 12 medium spearsCherry Tomatoes, Fresh, 4 sliced in halfCapers, 2 tbsp, drainedGarlic, 3 cloves, crushedBasil, Fresh, 5 leaves choppedLemon Juice, 1 tbspWhole Wheat Tortillas, 2 mediumOlive Oil, 1 tbspCouscous, 1/3 cupWater, 1/3 cupPepper
Bring water to boil, stir in couscous and let sit covered for 5 minutes.
If shrimp are frozen, thaw for 10 minutes in a bowl of cold water.
Heat olive oil, stir in garlic and basil and cook until just begins to brown. Add whole asparagus spears and sprinkle with lemon juice. Stir fry until tender & removed from pan.
Add raw shrimp and stir fry until they just turn opaque and pink. Do not overcook, or they will become tough. Sprinkle with pepper.
Assemble wraps:
-Spoon couscous across the middle of the tortilla.
-Lay about six whole asparagus spears on top.
-Add shrimp, tomatoes, and capers.
-Fold in one side, fold in the bottom and fold in the other side.
Makes 2 hearty wraps.
