Greens and Tofu in Honey Mustard Dressing

Ingredients
3 Cups Torn Mustard Greens2 Cups Baby Spinach1 Cup Sliced Mushrooms1/2 Cup Thinly Sliced Red Onion1 Cup Diced Extra Firm Tofu1/2 Cup FF Sour Cream1/4 Cup Dijon Mustard1 Tbl Honey12 tsp Cayenne Pepper
Directions
Wash, dry and tear Mustard greens. Toss together with spinach, mushrooms, and onion.
Mix together sour cream, mustard honey and cayenne to make a dressing and toss with tofu. Let stand for a few minutes until tofu absorbs some of the flavor, then toss the tofu mixture with the greens. Salad refrigerates well.

Makes about 6 1 cup servings.
