Campfire Cowboy Potatoes

3 LARGE cans of diced potatoes or 8 cups raw3 cans of peas1 cup chopped onion3 pounds extra lean ground beef4 cups low-fat shredded cheddar cheeseCavendars' Greek Seasoning (or any all-purpose seasoning that your family likes)
This can be done on the stove top (Dutch oven) or over a campfire (cast iron Dutch oven) -- either way, cooking times are about the same (campfire may be faster). Cook ground beef and onion together until all pink is gone. Drain. Add potatoes, peas, cheese and seasoning, mix together and heat through for about 10-15 minutes. Serve with wheat dinner rolls and a salad. Makes 12 one cup servings -- great for company since it makes so much. Of course, you could cut in half for family size portion too.
