low carb! spinach

Ingredients
frozen chopped spinach, defrosted 280geggs, beaten 4garlic clove, crushed 1salt and pepper
Directions
1. preheat oven to 180. line tin (swiss roll tin or other) with non-stick paper.

2. squeeze as much liquid out of spinach as you can. then mix in bowl with eggs garlic (crushed or finely chopped), salt and pepper.

3. pour mixture into tin. bake for 10-15 mins until firm and springy.

leave to cool in tin, then cut into pieces. (makes 8)

delicious with cream cheese or any topping/filling of your choice.

    Am I the only one who had trouble baking this? I squeezed out as much water as I could but the bars were sitting in liquid after double and triple the time. I'll try to squeeze even more liquid next time. Still tasted good, though. - 11/10/07

    Good with salsa, too. :oD CALEBCOLE--when I use frozen spinach, I put it in a collander and rinse it, breaking it up, leave it in the collander for a few minutes, while prepping other stuff, then move it to a plate with paper towels on it until I'm ready to use it.     Finally a way to eat spinach other than in a salad..This is super simple and for someone that really doesn't like spinach..well I do now..very nutritious and tastes great..I have had this several times now and gets that dark greens in without always having to have a salad..Thanks for the recipie!!! - 5/4/07
