Zucchini Ribbons with Raw Tomato Basil Marinara

Ingredients
1 1/2 cup ripe tomatoes, blended1/2 cup fresh lemon juice1 TBS extra virgin olive oil3 cloves garlic1/4 cup red bell pepper3 leaves of fresh basil4 medium zucchini's
Directions
In a blender, combine the fresh tomatoes with the basil, olive oil, lemon juice, garlic, and red bell pepper and puree until smooth or blend till chunky depending on your sauce preference.

Cut the zucchinis lengthwise into ⅛-inch slices, then cut the slices lengthwise into ⅛-inch strips resembling spaghetti. Transfer the zucchini noodles to a bowl. Add the marinara sauce, toss to coat and serve immediately.

    I find if I take the zucchini and place it in a collander in the sink, sprinkle sea salt on in and let it sit and drain for awhile, it mocks pasta closer. For my family at first I had to peel it, now I leave the skin on. It helps them break into raw much easier too. - 9/22/12
