1 Potato - Cubed1 Head Cauliflower (florets)1 Cup Lentils1 Onion2 Cloves Garlic3 Tbsp Ginger3 Tbsp Turmeric1 tsp Cayenne1 Tbsp Vegetable Oil1/2 Cup Cilantro3/4 Cup Water
Preheat oven to 475
Roast Potatos and Cauliflower in oven until tender and lightly browned, about 35 minutes.
In a skillet, saute onions, garlic, and ginger in oil until onions are translucent. Add the rest of the spices and lentils and mix together, continue cooking for 5 minutes.
Add water to deglaze pan and then stir in the potatos and cauliflower, mixing thoroughly. Cook until water absorbs (about 1 minute). Add cilantro and serve.
Can be served with Rice or Naan.
