Redskin Potatoes With Garlic Butter

5 Medium Sized Red Skin Potatoes4 Cloves of Garlic Roasted1T EVOOButter or Margarin(Recipe is calculated using Country Crock Regulr)2T Parsley (Optional)
Makes Approximately 4 Servings.
Roast garlic for appx 30 mins, until tender. In the meantime wash your potatoes well, toss in olive oil, parsley is optional. Mix roasted garlic with butter or substitute, I like to use my mini food processor for this so it comes out smooth, toss into bowl with potatoes, mix until all of you garlic butter is well distributed. place on a backing sheet, & bake at 375 degrees for 35 minutes or until tender.
