Beef Fajitas

Ingredients
Avocados, California (Haas), 1 cup, pureedCheddar Cheese, 1 cup, dicedGarlic, 4 clovesLime Juice, .5 cupOlive Oil, 1 tbspOnions, raw, 1 largePepper, black, 1 tspSalsa, 1 cupSour Cream, 1 cupBeef, round steak, 16 oz*Mission whole wheat tortillas, 3 servingGreen Peppers (bell peppers), 2 cup, strips*Brown Rice, long grain, Trader Joe's frozen and precooked 1.5 cup
Directions
Cut beef into 4 pieces, marinate in lime juice, minced garlic, sea salt and pepper for 2-3 hours or overnight. Saute onion in oil for 2 minutes, add bell pepper and cook 2 more minutes. Thinly slice beef and saute with vegies and frozen rice. Fill tortillas and add avocado, cheese, and sour cream. Makes 4 servings.
