Cauliflower with Garlic and Parsley

Ingredients
1 head cauliflower2 tablespoons olive oil5 cloves garlic, crushed and peeled 1 cup water3 tablespoons chopped fresh parsleysalt
Directions
Cut Cauliflower into fairly uniform sections. In a large, heavy skillet, heat 2 tablespoons oil. Add garlic, sauteeing until fragrant. Add cauliflower pieces and turn in the oil. The add about a cup of water and bring to a low boil. cover pan and let the cauliflower steam. When cauliflower is soft but firm, the water should be almost absorbed, leaving a rich oil and garlic sauce. With the back of a wooden spoon, coarsly mash cauliflower. Add parsley and salt to taste.
