2 oz Whole Wheat Penne Pasta3 oz Scallops2 Tbsp Crumbled Gorgonzola Cheese3 cups Chopped Baby Spinach3 oz Grape Tomatoes Halved2 Tbsp Chopped Walnuts3 Tbsp Readt-Made Pesto
Directions
Defrost the scallops if frozen by running them under warm water. Cook the pasta according to package directions; drain and transfer to a large bowl. Add the scallops, cheese, spinach, tomato, walnuts, and pesto, stirring well to help wilt the spinach and mix in the pesto.
