Spinach, Feta, and Shrimp Egg White Omelet

2/3 Red Bell Pepper (70 grams)1 medium onion (200 grams)5 medium mushrooms (100 grams)1/2 cup spinach (20 grams)1 cup egg whites1 can shrimp (100 grams)30 grams Feta cheeseseasonings to taste (garlic, pepper, parsley)
Cut up all of the the ingredients. Cook onions, peppers, and mushrooms in a large frying pan on medium heat until tender. Add the spinach and shrimp and cook until warm. Add egg whites. When the omelet is mostly cooked through, place in the oven at high heat on broil. Cook in the oven until slightly browned and bubbled. Sprinkle feta on top and continue to heat until feta is warm and soft. Cut the omelet into 4 quarters and serve. Makes 4 servings.
