2 Tablespoons Butter 1 Cup 2% Milk, scalded3/4 Cup oatmeal 1 Egg, beaten3/4 Cup white flour 3/4 Cup whole wheat flour 1 Tablespoon Flaxseed meal 4 Teaspoons baking powder 1/2 Teaspoon salt 1/2 Cup chopped dated
Scald the milk and add butter and oatmeal. Let sit for 3 minutes. Mix together all dry ingredients, blending them well. Add the beaten egg to the milk mixture. Add the wet ingredients to the dry, stirring just until moistened. Bake in greased muffin tins at 400 degrees for 20-25 minutes. Makes 12 muffins.
