To make sauce:1 cup brown sugar2 TBSP Corn Starch1/2 TBSP Garlic Powder1TSP Ground Ginger1/2 C Apple Cider Vinegar1/3 C Pineapple Juice1/3 C Water2 TBSP Soy Sauce3 Boneless skinless chicken breasts cut into chunks2 Cups carrots sliced1 Green Pepper sliced and chunked 1 can Pineapple chunks
Make sauce first by combining all dry ingredients then adding wet; microwave approx 5 minutes or until the sauce thickens.
In a seperate pan brown chicken and add carrots, green pepers, pineapple. Cook chicken through and tenderize carrots & green pepper. Add sweet & sour sauce. Serve over rice.

The nutritional information does include the rice. I included 2 cups of rice so 1/2 cup per serving

Fantastic! I was skeptical because I love Chinese food and don't usually like how it comes out at home. But I didn't feel like I was missing out on anything! I was also concerned because the sauce smelled strongly of vinegar when I took it out of the microwave but it was great! I wouldn't change it! - 7/14/09

I put the sauce ingredients with three frozen chicken breasts in the crock pot on high for 5 hours. Then I added veggies and pineapple and cooked while I made brown rice in the rice cooker. Shred the chicken and spoon all over rice! YUM! ALSO, reduced brown sugar to 1/2 cup...still sweet! - 5/3/09
