2 t olive oil2 stocks sliced celery1 sliced carrot1 chopped onion3 minced garlic cloves1 14 1/2 oz can diced tomatoes1 cup kidney beans1 cup white beans1/2 cup vegetable broth1 1/4 cups diced firm tofu1 T chopped cilantro
Saute vegetables in hot oil 10 minutes. Add rinsed and drained beans, tomatoes and broth. Cover and simmer 30 minutes. Add cilantro and tofu. Salt and pepper to taste. Heat for 5 minutes.
