Blustery Day Soup

Ingredients
3 Large Onions, thickly sliced6 Serrano Peppers, sliced (or to taste)4 tbsp crushed red pepper (or to taste)2 tbsp fresh Basil, chopped2 tbsp Garlic, mincedOregano2 tbsp Balsamic Vinegar1 large can Tomatoes2 cups Celery, diced2 cups Red Cabbage, sliced20 Baby Carrots, halved1 lb lean Ground Beef, browned and drained14-16 cups Water (1 gallon)1/2 cup Barley, uncooked
Directions
Saute the onions, garlic, peppers, oregano and basil in the vinegar for 10 minutes, adding just enough water to keep it from sticking.

Add the remaining ingredients with 8 cups of the water. Bring to a boil, reduce heat and simmer for 50 minutes.

As the liquid boils off, add an additional 6-8 cups of water during cooking for desired thickness.
