Fresh Apple Cake with Splenda

Ingredients
1/2 cup unsweetened applesauce1/2 cup Splenda1/4 cup packed brown sugar2 large egg whites1/2 cup all-purpose flour1/2 cup whole wheat flour1/2 tsp baking soda1/2 tsp ground nutmeg1/2 tsp ground cinnamon2 cups chopped, unpeeled baking apples
Directions
1) Preheat oven to 350° F.
2) In a medium mixing bowl, combine applesauce, Splenda and brown sugar. Beat in the egg whites. Add the flours, baking soda and seasonings; mix well.
2) Fold in the apples and place in a greased 8x8-inch baking pan.
3) Bake for 30 to 35 minutes or until inserted toothpick comes out clean.
4) Cool slightly and divide into 9 equal portions.

    This is the exact recipe I made a few days ago for SP except spenda and egg white are substituted for the sugar and an egg. I am going to make this tonight; much light version. - 11/20/09
