Easy Cheesey Beef and Rice Cassarole

Ingredients

1lb of Ground Beef1 cup of low fat shredded cheese (colby or cheddar)4 cups of Uncle Ben's Instant Brown Rice Sauce:1 cup of ketchup1/2 cup of brown sugar (unpacked)1/2 cup of water2 tbsp of margarine2 tbsp low sodium soy sauce2 tbsp balsamic vinegar2 tbsp Worcestershire sauce1 tsp Chili Powder1 tsp Garlic Powder1 tsp Ground Oregano
Brown the ground beef in a skillet and drain.
At the same time, prepare the rice as directed.
In a large mixing bowl combine all the ingredients for the sauce.
Slowly stir in cooked rice until it's well coated. Stir in beef and 1 cup of cheese until the whole mix looks uniform.
Scoop mix into a casserole pan and top with rest of shredded cheese. Cover pan with aluminum foil (to prevent cheese from burning).
Bake at 350 for approximately 15-20 minutes, or until the cheese is nice and melty.
Makes approximately eight 1.5 cup servings.
Tips:
Play with the seasonings. It's really hard to screw this up if you use moderation.
Can substitute macaroni instead of rice, but it will change the nutritional content obviously.
Left overs keep well in the fridge for a few days if you put them in ziploc bags or containers.
