Lora's 300 calorie creamy shrimp and pasta dish

Ingredients
8 oz raw shrimp, peeled, deveined and drained4 oz dry pasta-prepare and set asideZucchini - use julienne peeler and only use the outer portions1 T. chopped green onion (scallion) tops1/2 c. cilantro, chopped6 cherry tomatoes, sliced in half or about 1/3 cup chopped fresh tomato2 Tablespoons picante sauce (Pace Medium)Squeeze of lemon1 treaspoon olive oil in non-stick skillet4 cloves garlic chopped fine1 c. water1 tsp. chicken boullion1 tsp. cornstarch2 T. whipping creamsalt pepper to taste
Directions
Put pasta on to cook, while this is cooking, prepare shrimp. Set shrimp to drain, drain pasta and set aside. chop veggies and combine in serving dish. Cook garlic in oil 1 minute medium high heat, add chicken boullion mixture and cook til reduced by half. Add shrimp and cook til just pink. Turn off heat. Put pasta in serving dish with veggies, picante, salt and pepper. Microwave pasta and veggies for 1 minute to bring to warm temp, take out and squeeze lemon over, then pour shrimp/sauce mixture over, sprinkle parmesan on top. Makes very large servings at 2 servings at 438 calories or 3 good servings at 292 calories each calories. Tastes like 1000 calories...simply delicious.
