Tofu Broccoli Alfredo

1 block extra firm tofu, drained and cubed2 bunches of broccoli, peeled and cut into bitesized pieces1 cup alfredo sauce1/4 cup shredded mozzarella1/2 cup french fried onion rings
Place broccoli in microwave safe casserole and cook on high power approximately 10 minutes until tender-crisp. Spread tofu cubes evenly over the top. followed by Alfredo sauce. Gently stir to combine. Sprinkle cheese over all, followed by onion rings. Put back in microwave for approximately 10 minutes until heated through and the cheese is melted. Serve over rice if desired.
