Israeli Couscous Soup

Ingredients
2 TBS olive oil1 medium onion, chopped2 medium carrots, chopped4 cloves garlic, minced8 oz Israeli couscous6 1/4 cups low sodium chicken or vegetable broth1 (14oz) can fire roasted, diced tomatoes- undrained3 TBS fresh parsley, choppedsalt and pepper to taste
Directions
Heat oil in a large soup pot. Add onion and carrots, cook about 10 minutes or until softened.

Add all remaining ingredients. Bring soup to a simmer. Cook over medium high heat 10-12 minutes until couscous is tender.

Divide evenly into 6 bowls.
