Meatless Loaf

2 c. Cooked Brown Rice1 1/2 c. Shredded Cheddar1 c. Finely chopped carrots1/2 c. Plain non-fat yogurt4 large eggs, beaten1/4 c. chopped onion2 T. Dried Parsley1/2 tsp. Dried BasilDash of salt
Makes 6 generous servings.
Preheat oven to 350.
Combine all ingredients and spoon into a greased loaf pan. Put the loaf pan into a roasting pan and add about 1 inch of water to the roasting pan.
Cook at 350 for an hour or until an inserted knife comes out clean. (I take it out of the water bath for the last 10 minutes or so just so that it'll brown-up the sides.)
Cool at least 10 minutes before taking out of the loaf pan and serving.
