Super Good Veggie Soup

Ingredients
1 tbsp olive oil 1 c onion diced1 c cerlery diced 1 c carrots diced3 c rutabagas diced4 c finely chopped cabbage3 c zucchini diced3 c broccoli chopped1 tbsp garlic chopped2 lg cans of diced tomatoes4 c chicken broth4 c water1 tsp salt or to taste1 tbsp pepper 2 tbsp Frank's Red Hot (optional)
Directions
In a large stock pot saute onions, celery, carrots on medium high heat until onions are translucent.
Now comes the easy part...yes, after all that chopping there's and easy part!
Just add the remaining veggies, stock and water in the pot cover and simmer, reducing the heat to a low gentle boil. Simmer 30 minutes then add seasoning to taste. Don't be afraid to add different veggies and seasonings to suit your own taste.
This recipe makes at least 24 cups of comfort.
