Tuscan White Bean Soup

Ingredients
1.5 cups sliced carrots1 small onion, chopped2 garlic cloves, minced3 Tbsp olive oil30 oz cannellini beans, rinsed and drained32 oz chicken broth, light, fat free and low sodium3/4 tsp salt1/4 tsp pepper
Directions
In a large soup pot saute carrots, onions and garlic in olive oil until carrots are tender.

Stir in beans, chicken broth, salt and pepper.

Simmer 20 minutes.
