Guacamole Beef Sandwiches

Ingredients
1 avocado1.5 teaspoons lemon juice1 tablespoon minced fresh chives1/4 teaspoon salt1/8 teaspoon freshly ground black pepper12 slices white whole wheat bread12 ounces roast beef
Directions
Cut avocado in half, remove seed, and scrape out fruit into a bowl. Add lemon juice, chives, salt, and pepper and mash. Spread evenly on 6 slices of bread.
Heat the roast beef in a skillet or microwave and divide evenly over the avocado mixture.
Top with another slice of bread.
Makes 6 sandwiches.
