Chicken Noodle Skillet

1 tbsp olive oil1 lb boneless skinless chicken breast, chopped into small cubes2 cups egg noodles1 can cream of chicken soup1 3/4 cups chicken broth1 cup baby carrots, sliced into halves1 cup canned or frozen peas
In a large pan, cook cubed chicken breast in olive oil until browned.
Add chicken broth and cream of chicken soup and mix until smooth. Add egg noddles, peas and carrots.
Bring to a boil, then reduce and simmer for approximately 15-20 minutes or until sauce is thick, vegetables are cooked through and noodles are tender.
Makes 4 servings.
