Sweet Potato & Apple, Baked

Ingredients
3 Small Sweet Potatoes peeled & diced (3cups)1/2 Med. Apple, peeled, cored & diced1/3 Cup Brown Sugar, packed4Tbsp Smart Balance Spread1/8 tsp Cinnamon (optional)
Directions
Preheat over to 375 degrees
Melt butter in shallow baking dish (I used a 9" square dish), add diced potatoes and apple.
Sprinkle sugar & cinnamon on top.
Stir all well. Cover with aluminum foil & bake 1 hr

The original recipe has cooking uncovered at 425 for 30min. I put mine in with my main course in the oven & had no problems that way.
