Tzatziki Sauce

24 oz. Thick Greek Yogurt (I use “Greek Gods” brand)½ English (seedless) Cucumber1.5 Tsp. Salt2.5 Tsp. Garlic Powder1 Tbsp. Extra Virgin Olive Oil1/4 Tsp. Red Wine Vinegar1/4 Tsp. Dill Weed
Use cheesecloth over a mixing bowl or container and let excess liquid drain from yogurt. While yogurt drains, use a cheese grater to grate the cucumber – make sure that you have anywhere between 3/4 to 1 cup of cucumber shavings.
Drain the excess liquid and put yogurt into mixing bowl. Next, use cheesecloth (or just use your hand) to drain excess liquid from cucumber shavings. In a small bowl, toss cucumber with 1 tsp of salt.
Add cucumber, olive oil, garlic powder, dill weed, and red wine vinegar to yogurt. Mix thoroughly and add the other ½ tsp of salt to the mixture. Place in a sealed container and let sit in refrigerator for 2-3 hours.
Makes 6 4-oz servings
