2 tbsps vegetable oil 2 onions, sliced 2 celery stalks, diced 1 carrot, thinly sliced 1 green capsicum, chopped 2 tsps chopped fresh garlic ½ - 1 tsp dried chilli powder 420g can HEINZ Baked Beans in Tomato Sauce 400g can chopped tomatoes ½ - 1 cup vegetable stock (or water) 150g button mushrooms, sliced 150g green beans, sliced ¼ cup tomato paste ¼ cup chopped fresh parsley or rosemary
1. Heat oil in a large saucepan, add the onions and cook for 3-4 minutes, or until tender.
2. Add the celery, carrot, capsicum, garlic and chilli, cook for a further 3-4 minutes.
3. Add the remaining ingredients and bring to the boil. Reduce heat, cover and simmer 15 minutes. Stir occasionally. Serve over a bed of couscous or creamy mashed potato.

I made the recipe this morning and let it cook alday in the crock pot.
The grandkids just got home from school and they are chowing down. Like they never saw veggies before.
I did top off the servings with soy-chedder cheese and a few corn chips. - 5/1/09
