Ingredients
2 cups sugar1 cup cooking oil3 eggs beaten1 teas. vanilla3 cups flour1 teaspoon baking soda1/4 teaspoon baking powder1 teaspoon cinnamon4 cups grated drained zucchini1/2 cup chopped walnuts ( opt.)
Directions
mix eggs, sugar , oil and vanilla together. Sift dry ingredients and add to sugar mixture. add zucchini and mix well. add nuts if desired.
Bake at 325 for 55 min. in greased loaf pans
makes 2 loaves

    Halved this recipe it came out better than I thought, I also substituted applesauce for the oil used 2 tbl. spoons of veggie oil. Will adjust again but definitely will make again. Also squeezed out most of water from the zucchinni. - 3/1/12

    modified to 3/4 cup sugar, and instead of one cup of oil (which is insane) I put 1 cup applesauce and 3 tablespoons of EVOO. Delicious! - 7/23/11

    I made this this morning, and my bread is not even close to being done? I put it back in the oven on 350, hope it doesn't burn being in there longer, did I do something wrong? Bread did cook! Need an extra 10min but it's delic!!!! - 8/8/10
