Ingredients
1 lb. Chicken Breast1 medium onion (I like Texas Sweet)1 cup Carrots, cooked (can use fresh or frozen, canned gets too mushy)1 cup Broccoli, cooked (fresh or frozen)1 jar Alfredo Sauce (look for the lowest in calories)1 lb package Whole Wheat Linguine or Fettucine
Directions
I like to cut my chicken breast into fajita size strips, then grill on my stove top grilling pan.
Begin cooking your carrots, broccoli and pasta according to package directions.
Grill Chicken Breast, cut into strip or bite size pieces (however you prefer).
When chicken is finished put it into a large sauce pan and add onion and sauce. Heat over med-low heat, and bring just to a boil, stirring occassionally.
Then add veggies, and bring just to a boil again. Stirring occassionally.
(I add a little water to the empty jar and put the lid back on and shake to get all the remaining sauce out of the jar, plus it adds a little water for simmering).
After your pasta is finished, drain. Then add to chicken alfredo sauce mixture and stir well.
Serve immediately!
