Portobello Gorgonzola Sandwich!

Ingredients
3 oz. Large Sliced Portobello Mushrooms1/2 sliced Red Bell Pepper1/2 sliced Yellow Bell Pepper1/2 c sliced onion1 piece Whole Grain Bread1oz Gorgonzola Cheese crumbles1 tbsp Canola or light olive oilCrushed Red Pepper
Directions
Warm Oil in large skillet, add sliced onion and cook about two min turning once or twice, Add peppers and cook two more min. turn to evenly heat. Add Mushrooms and cook until golden turning every min or so. Scrape all veggies to side of skillet and put bread in and toast on both sides. Put bread in center of plate and cover with mushroom/veggie mixture then sprinkle with cheese. Sprinkle with crushed red pepper.ENJOY!! Serves One.
