Waldorf Ambrosia Salad

Ingredients
1 c. apple, diced1 c. pineapple, fresh, diced1 c. green seedless grapes, halved1/2 c. raisins1/2 c. mandarin oranges1 large stalk celery, diced8 medium leaves, bib lettuce3/4 oz. coconut, toastedDressing:1 c. plain fat free yogurt1/4 c. low fat mayo ( I use smart balance light)1/4 tsp. ground nutmeg (or to taste)2 or 3 tsp. splenda (or to taste)
Directions
Mix dressing ingredients together

Mix all fruits except coconut together and mix with dressing.

chill ( 30 minutes) to blend flavors then divide salad on to the bib lettuce leaves and sprinkle with 1 tsp toasted coconut .
